Gajar ka Halwa/Carrot halwa

Well, today is Thursday and mostly every Thursday rocky and me go to Sai baba temple for the aarti. And at times i make some prashad, today i made this carrot halwa for prashad. Carrot halwa is a very famous Indian dessert. Warm carrot halwa tastes good with dollop of icecream. Usually you will find this combination in wedding receptions. My mil taught me this receip . At times i feel  so lucky to have mom as well as my mil as very good cooks because i have learnt a lot from them. This recipe is easy to make but it is a bit time taking, any how its worth waiting for this mouth watering dish.

Ingredients :

2 cups of grated carrot
2 cups of whole milk or boiled milk
3/4 cup sugar
2 tbs ghee
1/4 tea spoon cardamom powder
 1/4 cup Cashews, Almonds,pistachios ( For garnishing).



Step 1 : Peel and grate the carrot.


Step 2 : Heat ghee in a heavy dish then add the grated carrot and cardamom in it. Fry the grated carrot on medium flame till the water in the carrot disappear (fry it for about 15 Min's) .

Step 3 : Now add sugar and milk in it . Allow it to boil. Cook on low flame for 1 hour stirring it occasionally. Mix it well and cook till the sugar is dissolved and the milk has been absorbed.

Step 4 : Slowly the quantity of liquid reduces as  the milk dry's up. 

Step 5 : When entire quantity of milk has been absorbed, its an indication the halwa is ready to eat.

Step 6 : Garnish it with dry fruits. Serve hot, cold or at room temperature.
