Vegetable Briyani

My friends love my mom's veg briyani . Whenever she made this , she makes it a point to invite my friends over for lunch. Even now after i am married if any of my friends feel like having briyani they call up mom and ask to prepare it. Today i had one of Rocky's friends coming over for lunch and so i made this veg briyani for him. The best part of this briyani is that it is easy and quick to make, it wont take more of your time.You can add any vegetables that are available at your home for this. Here goes the recipe of Veg Briyani..

Ingredients :

1 cup basmati rice, rinsed
1 carrot
5 beans
Handful of peas
Fried paneer cubes
1 tomato
1 small onion
1/2 capsicum
1/2 tbs briyani masala
1 1/2 tbs Red chilly powder
1 1/2 cups water
1/2 garlic ginger paste
2 lavang
1Bay leaf
2 pinches of orange red colour (optional)
Small Cinnamon stick
Salt to taste.


Step 1 : Chop all the above mentioned vegetables and keep it aside. If you want you can also add potato and cauliflower to it.

Step 2 : In a cooker heat oil then add bay leaf, lavang, cinnamon stick and onion.Fry the onion till it turns transparent.

Step 2 : Later add the tomatoes to it. Keep it on low flame and stir it occasionally.

Step 3 : Once the tomatoes are done add all the other vegetables including paneer , dry masalas and orange red colour. Let it cook on low flame for 10 Min's.

Step 4 : Then add water to it. Bring the water to boil and add rice to it. After 1 whistle put the gas off.

Step 5 : Garnish it with fried cashew nuts or fried onion. It goes well with any curry as well as yogurt.

NOTE : Soak the basmati rice for 15 mins only.
