Koki (Onion Paratha)

Koki Sindhi's all time favorite breakfast. My hubby loves this. Koki is my every Saturday breakfast. Hot off the stove and its on our plates, the koki's are just amazing. I carry them whenever i go for long jouneys. This reminds of a small joke of my childhood, let me share it with you all. 

I was in my 7 Th when my school took me for an excursion to Ooty and 2 other places for 8 days. We were around 40 students and 3 teachers, we had to travel by train. My mom  packed around 10 koki's and gave it me saying you share this with all your friends and teachers, and put it in my bag.  The moment i reached the station seeing all my friends i was so excited because that was the first time i was going out with my friends leaving my family for a long trip.  Later in the train everybody started shareing and munching on the stuff that they had got. I completely forgot about my koki. After 2 days i realized that i dint eat it. I wanted to eat it and offer to my friends  but everybody was on a trip and no one was interested in home made food so i kept it in again.
on the 5 Th day when i was packing my stuff one of my friends was besides me and she saw that koki and asked me to trash it as i was not eating. But i was like my mom has made it with love and we should not waste our food i wont throw it i will take it and give it to her.lol. after our trip my mom saw the koki's and i told her all that i told to my friend, she bursted out with laughter and gave me a tight hug. Sweet memories ha. This is what comes in my mind when i eat koki.

Ingredients :

2 cups wheat flour
1 onion
2 green chillies
1 tbs red chilly powder
coriander leaves
1/2 teaspoon ajwain
ghee/oil 
salt to taste.

serves 3 koki's

Step 1 : Take 2 cups of flour add onion and green chillies  finely chopped, coriander leaves, red chilly powder, ajwain, salt mix it well.

 Step 2 : Add 1/4 cup ghee/oil  till small crums are formed

Step 3 : Finally add water and knead it into a stiff dough.

Step 4 : Make 3 portions of flatten balls out of it.


Step 5 : Roll out each portion like a thick round chapati. And see that you slightly make crossed lines in it as shown below so that the oil/ghee goes in.

 Step 6 : Place it on tawa cook on each side by adding little oil/ghee, from sides on medium flame, till very small patches appear on surface. 

repeat this for remaining dough.

Serve it hot with yogurt or papad or pickles.
